Monday Meal Planning

We've been really trying to eat better now that our little baby is here (she was born on June 1st, bad bad blogger mom!) and mom has more energy, I have way less time but more energy. ;) I've been gone for quite some time but I'm back for good I hope. My goal is to at least post my weekly menu and maybe even a recipe or two each week.

Breakfasts (milk or juice)
Cereal 2, oatmeal, toast 2, random baked good, and whatever Daddy makes on Saturday morning :)

Lunches (milk or water)
Corn dogs and watermelon
pb crackers and watermelon and cucumbers
Ants on a log and watermelon or peaches
homemade lunchables with cucumbers and juice
pbj with cucumbers
grilled cheese and carrots

Dinners (milk)
Country style ribs, cornbread, baked beans, butternut squash, salad
lasagna, green beans
Tuna mac and cheese, brussel sprouts
Red beans and rice, salad (this is a meal for my side of the family, recipe to come)
Crockpot creamy spaghetti, green beans
Chicken Taquitos, salad

cucumbers, carrots, celery
watermelon, peaches, applesauce, pears
abuelita hot chocolate
regular popcorn
kettle corn (once a week only, we tend to OD on this stuff!)


  1. You know, I would gladly eat a vegetable over a piece of fruit any day (seriously!) but we seem to get into a vegetable rut.
    How do you serve your squash? I love it, but the family doesn't.

  2. My kids aren't to the squash loving stage yet but Kev and I like it with butter and little bit of brown sugar.
